I realize i've been slacking a bit in the food department. I wanted to start blogging a recipe a week, and a deal of the week. It seems i either get the recipe part down or the deal part, but both? so far, it's not happening! But, i'm trying!
We've had quite an empty pantry this last week. So i've been reaching back to the depths of the pantry to try to use up all the food in the house before Cora comes, and just get up to date on stuff. In doing this, i came up with this meal. Healthy...quick...easy...and inexpensive.
Here's what you need:
*Rice (i suggest using brown rice. It's much healthier, but, this is what we had to use up in our cupboard!)
Total cost was less then 7.00
Cost per serving comes out to less then 2 dollars a person. Make in bigger quantitates for easy leftovers!
EASY!
HEALTHY!
GOOD!

*Meat. ( I used 2 cans of chicken)
*Taco seasoning. (I used about 1/2 a package)
*1 can of corn
*1 can of black beans
*Sour cream&Salsa
Here's what you do!
1. Make your rice (mine was instant..so it literally took 6 minutes in the microwave)
2. Heat in a pan your meat and corn and beans and taco seasoning all together.
3. Put on plate, add sour cream and salsa on top!
(you could add mexican cheese on top or put this in a tortilla too!)
