Some Foodie Adventures.



So, you've missed a lot.

Okay, well- i've missed posting a lot.  I don't think I even posted about Cora turning 8 months or Owen learning how to write his name or even Easter!  But that will all have to wait because for now i want to share with you some of my YUMMIES i've cooked and baked lately!

(if you are one of those haters who doesn't like to look at pictures of other people's food..now would be a good time to skip out! )

these are called "vegetable enchiladas"
To me, it was more like a vegetarian mexican lasagna.  It used corn tortillas, cheese ( i used fat free) and TONS of veggies.  A whole head of cauliflower, peppers, and some other goods too.  Let me tell you peeps, it was awesome.  and healthy.





This next picture, i did NOT make.  But i am excited about.  Some of you may know that recently I made the mistake of tasting nutella.  Yes...mistake.  Because i LOVE it!! and my waistline does NOT! 
So, i found this alternative in which the first ingredient is actually hazelnuts and not sugar.  No hydrogenated oils either.  I'm in love.
However, i probably won't ever buy an actual jar of it...because i'm so not in love with the almost $11.00 price tag..i kid you not...


This is called "Protein bread"  again, via pinterest.
No sugar.
Blueberries. Whole wheat flour. Oats. Bananas. Protein Powder and probably a few others i forgot to mention.  It's yum.  Way yum.  And filling!!! My husband likes to LATHER it in peanut butter...oh boy.


Then for easter I made this beauty:

Raspberry Banana Cake with Lemon frosting.  On the health(er) side...but, i don't know a healthy cake, do you?  It was amazing..

and Last but never least..
cauliflower pizza crust.

Yes, i was skeptical when i read the title..but after i ate it, i felt as though i had stumbled upon a well hidden secret!  Pizza Crust made out of a vegetable?  YES!  Good for the waist line and GREAT tasting!  In fact i would go so far as to say this is one of my favorite home made pizza's i've ever made!





There you have it folks, some of our good eats lately.

We got part 1 of our computer fixed and are now working on part 2.  (urgh.)

Our week

oh!  And guess who turned 7 months old this week?  17.2 lbs, and 25.8 inches! She sure is growing!
   She officially is mobile...the girl rolls everywhere.  She graduated into a size 3 diaper, and she's just becoming less "baby."  I'm not a fan.

Operation bridesmaid dress comes to a close!

Better late then never, eh?
Today, I went to re-try on the bridesmaid dress in a smaller size, and guess what???

it FIT!!!


well, sort of.  It was wayyyyy too short.  So short that my underwear was literally showing. haha.  apparently you loose a lot of length with the next size down.  so long story short, i have to order the bigger size anyways and then get it taken in. ha! so i didnt save any money.  :)  but, i accomplished my goal and im thrilled! on to the next one!

oh, and dont worry, i'll take a break fron weight loss posts for a while :)

Skinny(er) jeans! :-)

Today was a happy day for this girl..(me)
I went to the store to buy some jeans as mine were too big on me!  And bought the same exact pair of jeans, a whole size down!! they slid right on!!!
Now i've been wearing the same exact pair of jeans since Cora was born...the only difference is they are 2 whole sizes smaller.

I'm pretty excited.

Why i've been M.I.A

It's been a while. And the reason for that is a one word answer: CHAOS.

Owen got sick. Not too sick but just enough to make him a grouch. Then, out of the blue one evening, he let me know that he shoved something in his ear, and then he started screaming...for hours, nonstop. I checked his ears and didn't find anything.  Immediately i thought the worst thinking "he must have stuck it down there so deep and they are gonna have to cut him open!" ahh!  I called Mark and made him leave work and off to med point we went.  Turns out, there was nothing in his ear, but he did have a double ear infection.  SEVERE in one ear, and moderate in the other.  Days of puking, being grumpy, and sleeping very little followed.

THEN, the very next day, i called the doctor and begged her to get Cora in because i could tell something was up.  Skip long boring details, and turns out she had her first ear infection.  Yeah!Two babies with ear infections...way fun.  It was a fussy, amoxicillin filled weekend in our home!  Both kids puking, and you name it.  NOT cool.

Then, last week, I watched my boss's grand-daughter all week about 10 hours a day, each and every day! It was pretty crazy.  They kept me so so so busy!  I was thankful to have the extra work and also a buddy for Owen to play with!He was much less bored!  But they did keep me on my toes, and i thank the Lord i don't have three. ha.  Here are a few pictures of Owen & Lucy...they had so much fun.









As soon as I dropped Lucy off Friday evening, I dropped my kids off at my parents house, and went home to begin HOURS of baking for Owen's 3rd birthday party the next day...(i know, i didn't plan very well!)

The longest part was making allll the homemade frosting. I don't do this all the time, so it took quite a while.  way too much stress.   Pretty sure people wouldn't of been able to tell a difference if i had just bought it from a store...(note to self)
I must admit though, they looked WAY cute and tasted WAY yummy.

i don't blame you.)

The next day was Sunday, and I was SO wiped out from the previous week.  So we did nothing.  I left my house a disaster, frosting all over the kitchen, whatever.  We relaxed.  It was brilliant.   Then at 4pm, we took some photos, well our friend Stacie took some photos for us (you can find her on fb under Stacie Doi Photography.)
We wanted Owen's 3 year pics and Cora's 6 month pics, and we got those, but it also turned into a whole family photo shoot, and was a lot of fun.

Then Monday rolled around and my sweetie girl had to get shots. boooooo.
She came home and barfed several times.  It was lovely.  Okay, sarcasm aside, it was awful.  She was snugly and quite needy all day.




And now, it's Wednesday...Praise God.  The weather has been beautiful.  Aside from some slight poop disasters, this week has yet to be as crazy as the last...but my house is still a disaster.  Oh well, the secret is out, i'd rather play outside then clean my house...ha.  Judge away!
